Autumn Winter Canapes 2009

Our canapés are served in filo baskets, homemade pastry and flower cups, bamboo sticks, hand-carved willow forks, a variety of crostini flavours and homemade biscuits.  They are created to suit the flavour of the canapé as a whole and are the chef’s expression of flavour and presentation.  The building of the canapés is done on site by one or more of our team and served on stylish plates and patters.

  • Seared scallops and sautéed chorizo in an oatmeal cup
  • Poached flaked salmon with fresh apple and lemon grass
  • Wild mushroom mousse on a homemade water biscuit
  • Roasted squash and Taleggio wrapped in proscuitto ham
  • Rolled Welsh shoulder of lamb with garlic, ginger and chilli on a stick
  • Smoked haddock goujons with a minted pea dip
  • Grilled red mullet with tomato, peppers and chilli salsa
  • Smoked trout rillette with a tarragon mascarpone cream
  • Celeriac and apple rémoulade topped with slow roasted walnut
  • Grilled sea bass with olive sauce vierge
  • Blue cheese and spinach frittata
  • Salami Milanean with gherkins and capers
  • Grilled fennel and goat’s cheese salad in a wee filo basket
  • Welsh ham and leek in a Dijon mustard dressing
  • Aromatic chicken, lime and lemon grass terrine with a dab of wasabi
  • Steak tartar with mini chips or vegetable crisps

8 x canapés @ £9.00 per head
12 x canapés @ £12.50 per head

All prices exclude VAT

Additional costs:
Hire of glasses, crockery and cutlery @ .22p each
Hire of linen table cloths @ £5.00 each
Hire of linen napkins @ £1.00 each
Hire of waitress @ £10.00 per hour (4 hour minimum)
Hire of wine waiter @ £12.00 per hour (4 hour minimum)
